Best Homemade Soup In NW Florida

Smoked Tomato Bisque
Servings: 6
1 can Canned Tomato crushed
3 each Tomatoes
2 cans Tomato sauce
1 each Yellow Onion chopped large
1 tablespoon chopped
2 tablespoons Canola oil
1qt. Vegetable or chicken stock
½ qt Heavy Cream
To taste Salt and pepper
Directions:
- Smoke the onions, whole tomatoes and garlic in a smoker for 30 minutes.
- In a large soup pot combine the canned tomatoes, tomato sauce, smoked tomatoes, onions, and garlic and bring to a simmer for 5 minutes.
- Add the stock and simmer for 10 minutes.
- Puree in a blender or with a stick blender until smooth.
- Return to the pot and simmer adding the cream for 4 to 5 minutes
- Season to taste.
